After 10 days. Until then they should be left completely alone, otherwise, the Mom may feel threatened, in which case she may abandon or eat them.
Also, you need to separate them by sex at 4 wks, or you will end up with many more baby hamsters!

Wait until the babies have their eyes open.
At that time, they will be starting to eat on their own.
The mother hamster will eat the young if she is disturbed when the babies are between birth and 2 weeks.
Have a soft towel or something nearby in case they drop or fall because they are extremely fast at this stage.
The more you handle them, the friendlier they will be.
As soon as all the babies (about 5-6 weeks) are not nursing any more, separate them by sex because they young ones are capable of reproducing by then.
Hopefully you already have taken the male and put it in a separate cage too.
Your female would enjoy any fruits and veggies.
The babies will love munching on them too.
No iceberg lettuce.
Please do not use cedar shavings as it is not good for the respiratory systems.

I would wait until they are at least a week old.. try petting the mom make sure she knows your not there to hurt her babies and see how she reacts. maybe pet the babies every now and then for the first couple of days and then when it looks like she wont have a problem with it pick it up.. even if its for just a little bit at a time.. petting the babies before you decide to pick them up puts your sent on them and once you know that momma wont mind you should be able to hold them anytime.. i had a hamster who had babies and she loved me, she didn't mind at all that i was messing with the babies.. but some can be territorial so be safe.. and love the babies ..

Wait until they get some hair and their eyes start to open and they are crawling around.
Be very careful the first week, the mom can bite you just because she is protecting her offspring.
Enjoy your babies!!
