Hi. I'm an engineering major and am applying for an Internship/job. What GPA do employers consider the minimum that would be acceptable or something that I wouldn't be afraid to show on my resume?

Depends on the firm. I've seen some elite firms at 3.2, and others at 3.0. But usually it's not really the GPA, it's the degree.
Even a 4.0 can be beat with an MS.

edward has a good point. Most engineers I've known weren't the sharpest tack in the box. That's why every engineering school as far as I know has "engineering math'' classes, and the math dept has the 'real' math classes. The diff is in the proofs. The math major needs to understand the math and the proof, the engineer just needs to get enough of the math to see why the computer program works. So, yes it's 'good enough'. But if doing engineering doesn't thrill you, I mean if you don't lust to build stuff, you don't drool when you take stuff apart and put it back together, then go do another job.

Engineering majors are notoriously hard to get good grades in, and always have lower GPAs than other majors. My resume handbook from college says to list your GPA if it is over 3.0 (out of 4.0) and that engineering majors are strongly encouraged to list their GPA. You should also list relevant coursework for the job you are applying to, and emphasize the technical skills you have learned in school.

Keep in mind that for a job, experience is much, much more valuable than a GPA.

I am betting around a 3.5 - 4.0 (equivalent of an 80 at the least) because that will ensure that you know what you are doing once they hire you - all they have to do is provide you with suitable training --- something that would lead them to believe that you would be an asset to their company etc...
