Depending on what colour it is to begin with is how dark you would be able to dye it. For example, you can't go from white to black, just like you can't go from black to white in one step with hair when you dye it.
Firstly, don't use a rose from your garden, go buy a single one from a florist or a grocery store, they usually last longer than normal, and depending on where you get it, it should have a packet of mixture to make it last longer. If it doesn't have this mixture, dissolve an asprin or two in the water your rose will be in, the dye process could take a day or two. Go get the proper color food coloring and put enough to make the water a dark color, so that you know there's alot in there and sit the rose in it. As the rose sucks up the water, you will be able to see the dye. This usually only works on red roses to turn them black with black dye or blue dye.
I hope this helps, and remember, be patient, the results might look funny at first, but it can take time.

put a lot of blue food dye in a vase of water. I used to do it to carnations. The only problem is the stem will pick up some of the color. However, the petals will soak up the blue water and the food dye is safe enough that it won't kill the roses.

If you mean a cut rose, I take a white rose and put it in water that has food coloring in it. As the flower takes up the water it absorbs the color too.

If it is fresh you can add food coloring to the water and cut about 1/2 an inch off the stem and giving fresh water/color daily. If it is dried you can go to a craft shop and buy flower paint (usually a mist type paint) that you basically spray paint the flower with.
