At this time in my life, I think I'd pick one of the Dark Hunters Sherrilyn Kenyon has written about.
They are immortal, and that might be a problem, but they are true, and when they fall for a woman, that's it - they don't look anywhere else. It's intense since most have been looking for centuries (and sometimes there seems to be a connection from their mortal life).
If I had to pick, it'd probably be Vane - he's a werewolf and interacts with the Dark Hunters (he's a good guy) and the lady he falls for has just been let go by her boyfriend (she doesn't fit her ex's image - too large). It's because of his goodness (and yes, he looks nice and wants to please his lady) that I'd choose him.
Now once I read one about Acheron, the head Dark Hunter who keeps a lot of secrets and hails from Atlantis, I might change my mind. He's interesting, but I don't know him too well yet. But you did say one, so Vane. :)
