Eggs aren't as bad as people think. Serum (blood) cholesterol and dietary cholesterol isn't as correlated as people think. Eggs are a great source of protein and the B vitamins.
Evidence showing that eating a lot of dietary cholesterol doesn't increase blood cholesterol was discovered during a statistical analysis conducted over 25 years by Dr. Wanda Howell and colleagues at the University of Arizona.
I usually scramble or hard boil them. Sometimes I soft boil them as well, and put them on toast! YUM! :-)
