Ethnicity is a cultural description based on what people practice or believe and are put in an ethnic group. Based on the heritage or family background a person has, they are put in a particular ethnic group. These two groups will blend and stereotypes form causing the confusion between the two. You might tend to see Jewish people being Caucasian from Israel, but there are other races from other places that will fit the Jewish ethnic group as an example. Remember also that these are only classifications for easier identification and reference. There frequently are mixtures of each group.
