A word-pair like this may be called by several different names -- some of the most common are "reverse palindrome", "semiordnilap" [a term coined by Lewis Caroll, by reversing the word "palindrome"!], and "anadrome".

The longest are three eight-letter sets:

desserts – stressed
dioramas – samaroid
redrawer – rewarder

According to Wiki the longest palindromic word in the Oxford English Dictionary is tattarrattat, coined by James Joyce in Ulysses for a knock on the door.
And for your interest, apparently one of the first human conversations was of a similar pattern:
"Madam, I'm Adam".
To which the lady replied, "Eve".
