Wainscoting is a finish material generally used on a portion of a wall - for example from the floor to a chair rail - it can be a variety of materials - plastic wainscoting is used in wet enviroments to protect the walls and make them easy to clean. This can be plastic laminate (Formica) or a product called FRP (Fiberglass Reinforced Plastic) - These are easy to clean and non-pourous - Traditional FRP has a very limited color range, but companies have recently made available a broader pallette of colors. In some jurisdictions an "impervious surface" is required in public toilet rooms from the floor to 48" above the floor. Probably more information than you really needed.

Wood is better by far. You have many more finishing options with wood - clear seal, stain and varnish, and paint. You also have better durability - it takes impact better. As far as not being as good in bathrooms - unless you are planning to line a shower with it (something that is definitely NOT it's intended purpose) then it will be just fine. Most wood wainscot is made for outdoor applications - with proper sealing of course. In my opinion, wood is better but, I am partial to using wood for the beauty of the wood - plastic just looks cheap to me. Your personal taste, your budget, and what your plans are for the wainscoting will ultimately be the deciding factor in the product you use. I hope this helps some - just remember this is just my opinion and only opinion.

Answer number one offers a valid suggestion; I'll just add my 2 cents. Most often when I think W.C. I think of it as a two stage process; and/or just as molding.

PVC molding is gaining popularity; primarily for it's NEVER ROT applications for exteriors; but it can be painted and used indoors; most especially in bathrooms; etc. and does flex.

I hardly think I'd do it in the sense of half wall paneling; with a cap however.
