The Who have a few songs that are just instrumental, or mostly instrumental, such as the Overture, Sparks and Underture from Tommy.
The group Clann an Drumma is a Celtic folk-rock group that has a lot of instrumental songs as well.
You could also look to some classical musicians as well, Bach, Beethoven, etc. I'm sure that the contemporary cellist Yo Yo Ma has some lovely songs as well!

It really depends on what kind of music you want. "Good" is very subjective.
Try Jean-Michel Jarre. My absolute favourite instrumental artist. Also if you're looking for something classical but semi-contemporary look for Paul McCartney's Working Classical. Some orchestral versions of Beatles songs and some of his own compositions. The track "A Leaf" is my favourite on that album. Would make a fantastic classical interpretive dance.

Michael W. Smith is traditionally a christian artist, but he made a BEAUTIFUL instrumental album called "freedom". No words, just instruments and it is really good.
