I agree with the person who mentioned Clive Cussler. They're very easy and entertaining. Here's a few others I've enjoyed
The Historian by Elizabeth Kostova (vampire book)
The Alchemist by (can't remember) (interesting insights on religion and spirituality)
The Count of Monte Cristo by Alexander Dumas (classic revenge story)
Ender's Game by Orson Scott Card (sci-fi)
The Davinci Code by Dan Brown (does it need an explanation?)
The Autobiography of Benjamin Franklin
I Am America and So Can You by Stephen Cobert (very funny)
Catch-22 by Joseph Heller (WW II, very funny and interesting)
She by H. Rider Haggard (kinda like an Indiana Jones type book)
The Zero Game by Brad Metzler (action/espionage)
White Out by Ken Follet (action/espionage)
So many others that aren't coming to mind at the moment.
Enjoy!!

The Kite Runner, 1,000 Splendid Suns, Light in August, The Girl Who Loved Tom Clancy, Biography of a Stray Dog (oh boy did I cry)...there is so much excellent literature out there.
