Now is there any instructions/tutorials to use to make what I want to do like the black and white with color?

There are indeed lots of resources out there, but the best way to learn is to simply jump in and start using the program. The full download includes the usual help file, by the way.
The program doesn't compare to Photoshop(I have both programs) in terms of the quality of the finished product, but you certainly can't beat the price!

Yes. There's tons of GIMP help. Tutorials, forums and help pages. Even ebooks. Check the help files first. If you don't get your answer there, google GIMP. You're sure to find plenty of info.
