Intel Core 2 Extreme Processor X6800 2.93GHz would be an excellent choice for gaming but of course it costs $1000+ So I would recommend a basic Core 2 quad processor, their really good for their price and have high FSB.
Edit: after I posted I saw that you said around $350 so I would recommend either:
Intel Core 2 Duo Processor E6850
or
Intel Core2 Quad Processor Q6600

The most expensive processors (such as the Core 2 Extreme and Athlon 64 FX) are for the mots part a waste of money since give you very little extra performance compared to the extra cost of them. Only those with more money then brains buy them (but Intel and AMD make a lot of money off those people).
Right now the Core 2 Quad is pretty much the best processor you can get for a desktop machine so I'd be looking at that (nVidia 680 chipset motherboards can support SLI assuming you ever use it while Intel P35 chipsets can't, the 680 doesn't tend to overclock well but reasonable people run their hardware at the stock settings so it doesn't matter).

Quad core would be better.
Games like Crysis utilize multiple cores. And the upcoming Alan Wake, utilize all 4 cores. If you wants to play this game with great performance, 4 cores CPU is a must, nothing lesser than that.
Also, you can expect future games to support 4 cores at the least. So, a good quad core CPU would be a better investment in terms of future proofing.

Many reputable dealers will help you design the system you want, processor is important, but so is the video card and special features(I came across a game that called for pixel shading?, need a real pro to explain it all. If you aren't too picky most new machines should be okay, but with help from someone who knows their stuff you can fine tune it.

use a biostar motherboard try getting the latest one that uses ddr3 ram. use about 4 gigs of ram and a amd 64 xd2
procesor chip. use a 720 watt power supply and a logitech wireless keyboard and mouse + remember get a 1 tera bite hard disk. Make sure you got a good casing. the budget will be around USD2000 (VGA not included).

You could go with teh new quad cores from AMD but I think they are overkill at the moment. I would suggest an AMD 6600. There are faster ones but if your going to overclock the thing this one is the one you want.
