I have an awesome recipe for meringue cookies that uses peppermint and mini chocolate chips.....
They melt in your mouth!

I like chocolate meringues
3/4 cup semisweet chocolate chips
3 large egg whites, at room temperature
1/2 cup sugar
1 teaspoon vanilla extract
Microwave chocolate chips on high, 1 minute. Stir until melted. Beat the egg whites, adding the sugar slowly until the egg whites are stiff but not dry. Stir in the melted chocolate and vanilla extract. Drop by teaspoonfuls onto prepared sheets and bake until tops are dry, 7 minutes.

lemon meringues because of the fact the traditional ones are kinda too uncomplicated. i admire meringues once you placed some whipped cream and you placed a load of fruit on it like strawberries and kiwis
