I'd read about Charles Darwins theory of evolution which is essentially "survival of the fittest". This means that if people are only born with one eye, they will struggle to survive more than someone born with 2 eyes, this is because they will lack depth perception and peripheral vision. People with 2 eyes dont have this problem and are more likely to 'survive' and breed and give birth to more children with 2 eyes and so on.
This is not so relevant today as people born with limited site still have a good life because of modern technology (and guide dogs) but thousands of years ago, they did not have any help at all.

If we are born with 1 eye and 2 mouths, we would observe only half the world, and show our lack of enough knowledge with two mouths !

So we have a spare in case something happens to one eye. Same applies to ears. We have two in case something happens to one. Then we will not be deaf or blind.

Because one eye would prevent us from having 3D perspective, which allows us to judge distances.
