What about a nice basket of gifts - like some good brands of speciality coffee & a mug (or two), some fancy cookies (Gilano cookies are YUMMY), maybe some speciality chocolates, hot cocoa mixes, stuff like that. Wrap it up nicely in cellophane paper and tie it closed with a ribbon.
For me - I always add in a loaf of homemade bread & a jar of homemade or speciality jam/jelly. And my family is mostly tea drinkers so I always tuck in a bag or two of different teas.
It's a nice way to show you were thinking about them without blowing your wallet out of the water.
If you aren't into the arts/crafts kind of thing - a nice plant for them, or a box of higher end chocolates always goes over well.

I like the idea of baking the pie, but not the card. Needs to be more personal would send a letter thanking them for their son, as how they have raised a great caring and loving person and how you appreciate him, and he could only have become that way by their nurturing, in effect thanking them for him. Have it come from the heart. Tis the season of miracles could touch them and make his dad and him see reason. The letter will be remembered long after the pie is gone.

I'd still bake them something, like cookies or candies, and also get them a gift card to a restaurant, or some movie tickets. Or you could get them a blanket/throw, or a nice set of coffees and hot chocolates. Good luck!

you could send them a gift card to a restraunt for the both of them to go to..or you could send them each a gift like a nice coffee cup and fill it with candy and wrap it with cellophane and put a ribbon to tie the top and curl the ribbon...

One year I bought my bf's (now hubby) parents a windchime. I found it at a garden center, so it was beautiful, nice quality and not very expensive - perfect! To this day (7 years later) it still hangs outside their home.
