If I could spend a day at Hogwarts, I would want to:
Visit each of the common rooms
Visit one of the Prefect's baths
Visit the Headmaster's office
Sit in of several classes
Eat my meals in the Great Hall
Be given a tour of the grounds by Hagrid.

I would definitely like to to take a charms lesson, to be it always sounded like an interesting subject. Also the school library is one of the other places and the Room of Requirement is about the far most interesting place in Hogwarts (except Hogwarts its self).
Wish there was such a place of Hogwarts (who knows maybe there is).

Play Quidditch and have a talk with one of the portraits, find out what they have to say... and eat! The food always looked delicious in the movies ;-)

I would get a wand and lern magic so i could stun someone or something.and get pumkin pasteys and caldren cakes and evry flaver bointey bout beans
