Never arrested, though it's on my background check.

All right, then should I contact the business and make preperations for paying them back? Or do I contact the courts?

Also, it was dismissed, when applying for a job, should I bring a copy of the court papers with me?

Much contradiction. Discuss with a lawyer or the DA. If a police officer showed up and issued you a citation you were arrested and released on a citation.

"if the store made me agree to restitution shouldn't they have tried to contact me to collect it?" - It is YOUR responsibility, not theirs.

no because you agreed to it. They probably only dismissed it because you agreed to pay it and now you didn't pay it. Unless it is some type of legal document that you signed or a verbal agreement with the company you don't have to pay it
