I made a Shepherds Pie.

1/2 lb lean minced beef
1 medium onion
1 medium carrot
Few frozen peas
1 1/2 lb mashed potato
4 oz cheese
paprika
stock cube and 8 fl oz water boiled
mixed herbs
olive oil

Chop the onion into small pieces and the carrot into small cubes. Fry in olive oil until onion starts to go translucent. Add the minced beef and stir until brown. Meanwhile peel the potatoes and cut into small pieces and boil in salted water. Make up the stock with the water and stock cube. Add to the mixture with a teaspoon of paprika. Add salt and pepper to taste if you like and a squirt of tomato puree doesn't go amiss. Stir occasionally to prevent sticking and burning. When the potatoes are cooked mash them with a little butter and half the cheese grated. When the meat mixture has simmered for 20 minutes and the liquid has reduced and thickened pour it into an ovenproof dish. Place the mashed potato on top, spreading it out and running a fork over it to make grooves. Grate and sprinkle the remaining cheese on top and, if you wish, slice a tomato and put the slices on top of the cheese. Place in a pre-heated oven 180 - 200 deg and bake for 25 minutes. Serve with peas. Delicious.

I went to China Buffet! It was ok, but I would rather of been seating on my couch watching tv and eating broccoli cheese soup!

I already had lunch... I had some leftovers from last night. I made pork ribs, homemade mashed potatoes, fresh green beans, and a salad. My husband took the salad to work with him, and I heated up some of the rest!

Nothing yet. I'm still trying to decide. I'm thinking probably just a grilled chicken sandwich from Wendy's. It's the closest place to go and I forgot to bring my lunch.

Left over sliders. White castle opened in town and hubby brought home a dozen yesterday.

They taste as bad as I remember them from twenty years ago!
