Because fats, which are their glycerol esters, do not undergo oxidation. Fatty acids undergo esterification with coenzyme A (CoA). Then they get oxidized beginning with the third carbon from the end. To take a simple example with butyric acid,

CH3CH2CH2COOH ===> CH3CH2CH2COCoA ===>

CH3CO.CH2COCoA ===> CH3COOH + CH3COOH

The process keeps clipping off acetic acid molecules from the front end. The acetic acid gets fed into the citric acid (Krebs) cycle to be converted to CO2 and H2O.
