Ther heat of the gas burner flame blows electrons of of the ions in the sample. As the ions get to cooler parts of the flame, the electrons return. Because atomic orbitals are quantized at discrete energy levels, the electrons descend from one to another, emitting energy as light of specific wavelengths as they go. Some of these emissions are of visible light.
