Flat doesn't reflect light, so less flaws are noticeable. But with three boys, your walls will be trashed, because flat paint will come off with the dirt when washed. Satin is a little more washable and will show flaws in the walls. Gloss is the easiest to keep clean and new looking, but will show all the dips, and dents in the wallboard. Flat is a little cheaper. The only reason the painters are pushing flat, is they know with the other two, you are going to be calling them back, to touch up.

After 40 plus years of applying paint; I'll offer technical differences; and my TWO Cents.
Paint Pigment is blended with agents/Vehicles to produce a variety of finishes. One being Sheen, and perhaps more important; "Cleanability"
FLAT would offer the obvious, but is more porous and would be more difficult to maintain.
EGGSHELL: is slighty better in an upgrade.
SATIN: My fave. offers a modest sheen, but is very durable.
Semi- Gloss is another step toward more SHEEN; and cleans up well, but often doesn't allow Single coat covereage.
GLOSS would be similar in appearance and finish to appliances. vehicles; etc.
In a general sense it relates to what reasons you have for using what SHEEN. Obviously in your case FLAT would cause you more effort. BUT.... Aesthetics might also be an issue. High gloss colors/agents are rarely thought of; when painting a living room/ bedroom; BUT Satin would be a decent substance as well as SOFTER looking for those rooms that may not endure so much abuse.

semi-gloss has a shine
high gloss shiney like patent leather
satin dull/some wash up good
flat not scrubble at all
Kinder-startin is a brand made for kids highly washable even with crayons and stuff
read the cans and decide. Painters push flat because it's cheaper and you can't tell if they missed a spot because it doesn't have that shine

Flat; semi-gloss; Satin;refers to the finish appearence; really how shiny;or dull it appears each one is a little different. Check out the sample cards where you buy paint to choose.
