I get so tired of shredding all of the mail with our names and addresses on it.

if it's got your name and address on it, it's a start. i just tare off my name and address and shred only that. the rest goes with the newspapers to be recycled.

Yep. They could submit a Change of Address to the Post Office of a Credit Card company. Then look out!

If you are referring to paper junk mail such as those delivered by the post office then the answer is "yes".

YES, they can try to apply for those credit card offers. I shred everything that has my name on it to bits. Better safe than sorry.
