I don't know what your tastes are but here goes. Some of these books are old. Donald McCaig: Nop's Trials and Nop's Hope. Kind of sad stories about Border Collies.
James Herriott: All Creatures Great & Small. Wonderful memoirs of a veterinarian in Yorkshire.

I read A LOT and have more than 1 favorite!

Morgan Llewellyn-she writes historical fiction about Ireland and I recommend Red Branch.

Wally Lamb: She's Come Undone and I Know This Much Is True. Just awesome stories about some unhappy people.

Jane Smiley: A Thousand Acres, The True Travels and Adventures of Liddy Newton, Barn Blind and Horse Heaven
These are all worth reading
I hope you give some of these a try!

I could absolutely not pick only one ...
but
Tolstoy's War and Peace is one of the books that have left a lasting impression on me. It is so dense, dramatic, historical and over the years I read it several times in different moments of my life. I read it the first time when I was 15, that around 25, 35... and I always discovered new things and emotions. Tolstoy was a great humanist and I admire his way of portraying the human fate in midst of social drama.

good luck
