A fermentation is just the anaerobic breakdown of a nutrient. Some microorganisms produce acids from different sugars, some produce gas, some produce acids and gas, and others produce alcohol. So, fermentation tests just look for the ability of an organism to produce acid, gas, both or neither from different specific sugars.
