I'll answer this the way I always do...

First I'd have sex with my wife.

Then I'd watch TV for the other 58 minutes, ha, ha, ha.

I'd probably say "How do you know?" Based on that information I'd take action. If I were indeed going to die in an hour - although I cannot think of a plausible scenario where that would happen and I wouldn't be able to get medical attention unless there was some sort of accident or something, I'd spend the rest of the hour trying to contact my family and letting them know that I love them and getting someone to compose a letter for me to let them know how much I cared about them. I'd also spend some time talking to God and preparing myself to go.

It has become easy for everyone in our civilization to concentrate on terrorists both Islamic, and domestic, such as the young man who shot up a mall Wednesday.
But metaphysically these are not the important things in life, they are still the exceptions. We don't need to ask ourselves such questions as yours, because the odds are greatly against it happening.
Read the chapter "The Ethics of Emergencies" in the book "The Virtue of Selfishness," by Ayn Rand, and you will discover it is the inept and immoral philosophy of altruists who force us to wonder such things as "what would you do if you had to give your life for someone you did not know?" etc.
It may set your mind at ease. At the least, it will give you pause to wonder just how important such questions are--or are not.

If they were a fortune teller, I'd defend myself with a mirror ... they just predicted it to their reflexion.

If I was a hostage, I'd get them to swear to that I had an hour ... then I'd have 59 minutes to give them problems without them killing me.

If I was just bitten by a snake, spider and scorpion ... I'd use the hour to put things right with my family and with God

Yes, I knew that. My time of death is set to be 5 minutes before you do. What are you planning on doing for the next 55 minutes you have left?

I would just sit down and relax and wait for the next hour to come and then point a gun at him hard and tell "Munnabhai ka last scene dekha kya?"

And you know because????? It would of course depend on who the person was. Even Doc could not be this presice, unless, of course, you had been involved in some kind of accident? Even then...they would be quite nasty to tell you!
