If you go by the numbers, Mike Gartner had over 700 goals and never won a cup.
Of the current players, maybe Mats Sundin has had the longest career producing above average numbers and never getting past the third round.

Dionne and Gartner are great answers. Here are a few more.
Brian Propp: 5 trips to the finals with 3 teams, highest-scoring left wing in Stanley Cup history and zero Cups.
Valeri Kharlamov and Vladamir Tretiak are two who never even got to play in the NHL let alone an opportunity to get their names on the cup.
EDIT: Matt, Al MacInnis won a cup with Calgary in 1989.

C'mon people Thorton and Crosby are still in fine position to win a cup. I believe the player who toiled the longest and still hasn't got his name on the Holy Grail is Jeremy Roenick . He bleeds for every team he plays for(except Coyotes) and is one of few real personalities left in the game
