I first heard this song at a school function. I'm not religious at all but it's a beautiful song. What, in your opinion, is the best and most powerful version of this song (as in performed by whom)?

Both are good suggestions; Manheim Steamroller, and Nat King Cole. Try also the Mormon Tabernacle Choir. "Emmanuel" is written in plainsong. one of the earliest modes of arranging music, it may even go back to Biblical times. I think that may be that's why it reaches into our primitive selves and our collective memory.
