I feel an upscale restaurant is your best bet for tips. Which one has the fancier prices? Which one has a good bar? Which does the best volume of those which have the fancier prices and better bar? That should be your target.

I work at Red Lobster, and have for the past 5 yrs, and can't complain one bit about the money!! (hence the length of time I've been there)
I work 32-40 hrs/week, and make $400 - $600. Now this is for me. I get good shifts, good sections, and I'm a good server (that's why I get the good shifts/sections - because I'm appreciated by my management staff)
I don't think you'll have a problem making descent money at any of these places. It just depends on a lot of things, as you already know from being a server. Olive Garden is right next to where I work, and they seem to always be busy, but their menu prices are not as pricey as R.L. so I've heard the servers don't make that much money (higher check =bigger tip - or so we like to think, right?!).
I would suggest dining at the places you are interested in, and see which one you like the best based on the vibe/atmosphere. And what the heck, menu price too;)

Go with any of the restaurants in The outback Corporation. Carrabba's Italian Grill, bonefish grill, outback steak house. This company is the best company to work for. I did for 6 years and i had tons of opportunities and made great money. But if you are a good server and take the time to do your job right you can make money anywhere!!!

I would chose something along the lines of Olive Garden or Long Horn. Outback is good, but the hours you miss the business lunches.
Long horn is a great company and olive garden is a semi=upscale restaurant.
these two would be the ones I would go after.

In my opinion you should stay away from the chain restaurants. You can make more at an upper scale, relatively busy, smaller or family owned business. All the chains seem to cash in on your tips any way they can! But if you have to pick one, I'd pick the Olive Garden. People always seem to go there expecting to drop mad cash.
