Why not grass? Grass is easy to grow in a controlled area. Not so easy outside on my lawn =[

bamboo is a really fast growing plant, but I'm not sure if that 's the kind of plant you are looking for. Also, I think pumpkins and marigolds grow pretty fast too. I remember growing pumpkins in 2nd grade. Also, climbing vines grow fast, and then of course weeds.
