There are pro's and con's to eating well done/rare meat. Meat well done has a much smaller chance of giving you parasites. Meat that is more rare is easier to digest, causing less gastrointestinal stress. The most important part is the quality of the meat. Good quality meat of a good cut should taste good cooked any way (except burnt), even with a minimum of seasoning and sauce.
