We ALL have put people 'on pedestals' - that didn't deserve it. And we all have undercut beautiful people/kind hearts that deserved more (that what they got). Each person though, did "really exist" no matter what you/we applied... to them... and if you fell in love, that CONCEPT of them is still based on something that they projected... so, my answer is:
You fall in love, with them. The fantasy is part & parcel of what is 'presented' by that person...
EDIT:
You clearly can work BOTH sides, of this aisle... (because in a few days, I've noticed your avatar change from the 'reality' to the fantasy... and a change that can easily illicit/trigger VERY different responses in men, women... from the doting, caring matron/mother -- which is nice -- to the all-out super-sexy magnet that gets motors running, renders viagra unnecessary even in old men... and ruins marriages, just by seeing something that their wife can't produce/measure up to, on sight). I'm just glad and counting MY lucky stars that the heels weren't 4-5 inches high, because I'd be stuck & doomed, like a freaking moth to a flame.
YOUR AVATAR presents a fantasy.... (jesus christ, do you have a bad angle?) That fantasy just gets built up, every time I log-in to this Yahoo thing... (you've no doubt, made men exceedingly happy -- and broken some hearts/minds, seeing you walk away).
You know your audience, and in marketing terms that would qualify you as a "guru".

Fall in love eh? I love the thing that gives me what I want. I do have a sort of an individual concept of beauty. And yes, I enjoy creating a fantasy that involves activity with a mentally created individual.

if i build u a fantasy i would think of a perfect person,who do really exist i would be alone left out and it might me to late.and people will think you have lost my mind...
i would fall in love with a girl , because i am in my senses...
and i am not crazy .... plus a person is better then a stick if know what i mean...

Strangely, I just answered a question similar to this.
I don't build up fantasies because I don't have expectations - that is setting myself up, and I tend to analyse when beginning to find myself having romantic feelings for someone. But recently, I have decided to not be so darn analytical, just aware, and go with the flow and the moment.

it sounds crazy but fantasy
you make up a person who is perfect for you in every way how can you not fall in love?
but its the real world so we just have to find the guy who most closly resembles physically and mentaly your fantasy guy
