How about I will do #5 as an example:

if x is the number of pounds of coffee to add, then:

We will end up with (8+x) pounds @ $3.45
Assuming we want to give fair value to the customers (otherwise add it all and sell it for $3.50 a pound), the values will match:

2.25x + 8(3.75) = (8+x) (3.45)
2.25x + 30 = 27.6 +3.45x
2.4 = 1.2x
x = 2
