Not that I'm planing on becoming a wrestler (I'd get my *** kicked) but d othey get to chose their own gimmick and entrance music?

No, well, I'm sure they can suggest things, but WWE usually goes with whatever their writing staff thinks fits the superstar most.
Most of the music for superstars is created especially for them. Guys like Dave Oliver have been in the business of making instrumental wrestling music for a long time, and usually they start with whatever the promotion thinks sounds best on the superstar.
Independent wrestlers, on the other hand, have complete creative control over entrance theme and gimmick, but if you're signing with a big company, unless you had a successful indy run with a good gimmick that's come to personify you (like CM Punk) then expect to be assigned one by writing.

I'm pretty sure you're assigned your own gimmicks - Just look at Festus, Khali, Snitsky, etc. I just don't see the scenario below actually happening:
One day at the WWE HQ
Vince: So it says here in your resume you wanna be a wrestler? What gimmick do you want?
Khali: Well, I want to be known as The Great Khali. I won't talk in English even if I knew how, I'll have lesser moves than John Cena, and I want a manager who will translate for me during my interviews.
Vince: Sounds good. You're hired!
*Take note, IRL, TGK actually has a pretty nice British accent. LOL

They sometimes get to choose their gimick and music. But most of the time I think they get a gimmick given to them.

AT FIRST THEY ARE ASIGNED A GIMMICK AND THEN AFTER TIME GOES BY THEY GET THEIR OWN,AND YES THEY CAN PICK THEIR OWN MUSIC AS LONG AS IT GOES WITH THE GIMMICK,LIKE TRIPLE H - MOTOR HEAD THE GAME FITS PERFECTLY & THE SPITTING WATER AND ALL OF IT WORKS FOR HIM

I would say they might get to choose the song, but they will probably be given a gimick, or could ask for one when they join up.

i think you can sometimes choose your name.. but as of gimmick i don't think so.
