I'm buying something off gumtree and i'm not sure what protection I have if it doesn't arrive.

All paypal purchases are insured thur paypal up to $200
Just file a claim if it does not arrive.

I don't know what gumtree is but I know that on ebay buyers get all of the protection.
All you have to do is lie and say that you didn't receive your item and paypal will take the money back from the seller. even if the seller shipped the item with a tracking number and FedEx confirms that they delivered the item.
