I'd have to pick the original Dragon Warrior. It's a true classic.

Final Fantasy 1 for the NES. The magic all started there and there is now gameboy version called Final Fantasy 1 and 2: Dawn of Souls with extra dungeons, extra bosses and better graphics.

Final Fantasy 3. It's sooo good, they've even made it into a best selling DS cartridge with very little but the graphics changed.

Mother (Earthbound Zero) is also extremely good and hard. I would say that it's my favorite rpg, next to Earthbound (Mother 2)

I would agree with secrect of mana. Zelda link to the past is also a great RPG on NES.
