Well, being a Redhead myself, I can say that people with red hair have a different completion than others. For example, we have freckles, pale skin and normally Blue or Green eyes. Now, people born with brown, blonde, or black hair could have pretty much Any Type of completion. So, that is why I figure there is a difference.

We say "red haired" too.
There are animals in nature that we use this term with - red headed woodpecker, red brested finch, etc. I think the term "red headed" being applied to people just sort of carried over. Note: these terms in animals distinguish a subtype from the more common type. A woodpecker is "red headed" as opposed to the more common color of head - there is no speical term for the more common color of head. Brown hair is pretty common, thus no "headed" postfix.

I'm not sure, but I think it is because red hair usually goes along with a certain red-ish complexion (when it is a natural red, and not the result of dye). While someone with dark hair can have any of the entire range of skin types.
