I would define it as the study of why and how we do what we do and say that a good way to look at it would be the marriage of anthropology with biology.

My professor at UTEP once said that the study of Psychology is the perusal of empty mayonnaise jars with an intent to find something. For a good read check out Childhood and Society by Erikson; he has a good take and is very readable - its an old book, but probably makes more sense than the pc psychobabble whining that you get today.
