Oh man, so hard! If we're talking regular soundtrack, then probably Garden State, Moulin Rouge, and A Hard Day's Night (technically an album... but still used as a soundtrack =) If we're including movie scores, then Lord of the Rings and Harry Potter! Also Saving Private Ryan and Schindler's List....

The Last of the Mohicans. There is no better than that part at the end where they are running up the hill and the young girl jumps off the cliff. The music leading up to that and after that is fantastic.
