They're not. I have one that's blue and one forest green, not plaid.
Historically speaking though a lot were plaid because when you are weaving, the easiest design to make is plaid.
Just like the Scots who weaved wool into kilts always made them plaid, flannel material was done much the same.

They aren't. Or at least, the fabric of flannel isn't always plaid. I have plenty of flannel fabric that is really cute and has skulls and hearts on it, and I have some with butterflies. I've worn a few shirts that were made of flannel that weren't plaid.
Although- plaid is pretty awesome....

Is plaid a colour?
In the UK you can get brushed cotton shirts in a variety of colours and prints. If it really bothers you, go for a cordouroy shirt, they hang really well, last for years and rarely come plaid.

Lumberjack association - the primary reason they sell. If you want a heavy non-plaid, look at Chamois-cloth shirts, which are available as solids or plaids.

I know of a few different retailers in my area that sell flannels (otherwise called chamois,) in solid colors. I own a few myself.
