Where did this saying originate? I know it means 'Truth in wine' .

It is "In vino vertias. A latin phrase suggesting that people are more likely to say what they really feel under the influence of alcohol. It means, “There is truth in wine.”

I know it is Latin, but I think it came from Ancient Rome. It is spelled in vino veritas, which the truth is in the wine.

Not sure. But it might go along with ancient Athens revering Dionysus along with Athena, acknowledging that city people do need an occasional 'blast', in order to stay reasonably 'civilised', (which, of course is where the word comes from)
