Try some of the battles in the "Hundred Years War."
In that war between England and France you have some of the great (and often humorous) military upsets in history.
For instance: Battle of Crecy - 50K French against 20K English. By the end of the battle around 20K French and mercenaries were dead compared to a couple hundred English.
Battle of Agincourt - 200 English against 3000 elite French troops including hundreds of mounted knights. English routed the French and killed the "flower of French nobility."

The Pig War.
Type in Pig War under search and you'll find it in Wikipedia. One of the few cases where two mighty nations ALMOST went to war over an insignificant act. Instead they finally laid the entire matter in front of a disinterested third nation to be resolved.
COOL HEADS and DIPLOMACY prevailed.

Not very many people know about this one:
Tuskegee Syphilis Experiment
"The United States government did something that was wrong—deeply, profoundly, morally wrong. It was an outrage to our commitment to integrity and equality for all our citizens. . . . clearly racist."
—President Clinton's apology for the Tuskegee Syphilis Experiment to the eight remaining survivors, May 16, 1997

The conquest of the Kingdom of Hawaii and the process by which it became a US state is a fascinating story. One title might be "Liliuokalani: The Last American Queen."

The War of Jenkin's ear would make a different project, and you can be sure no one else would do it.
