We have a jade plant that is top heavy. Last night the plant broke at the base. I've looked online, but there seems to be differing opinions on how to save it -- put the stem in water, or let it dry out.

Also I'm pretty sure that it was overwatered, and not pruned enough. We have since taken steps to correct that and it was growing beautifully (but with a nasty lean). Though I can't change these things, I would like to save this beautiful plant.

Any suggestions?

Don't put it in water. Just let the wound callous over and then stick it directly into moist soil. If you have a branch that is growing too lone you can always clip it off, let the wounds heal, and the remove a few leaves and stick it into the soil to begin a whole new plant. As for watering, Jade is a succulent and only needs to be watered occasionally. Jade will let you know when it needs a drink by the leaves getting a little flat. Normally you would water it before this happens, but it won't kill it if you do wait that long. Over watering will kill it and rather quickly by causing rot.
Here is an article that explains how to prune and propagate the cuttings that way you can keep your existing plant healthy and lovely as well as grow new plants. I know it works because this is how I've always propagated my jade.

make baby jades out of the top,,,your going to have to prune it you cant re attache it if it is broke compleatly off, if its still kinda attached you can stake it but still you will have cut it way back to save it.. if you stake it put root hormone on the break and cover the break with leaves and sandy soil also keep the base dry and warm so not to rot....(the leaves really help with warmth...i cover all my outdoor plants with leaves)( kinda the way nature intended)
.better to prune than to lose all of it
overwatering is easy to tell cuz the leaves will feel muchy to the touch they should be firm ...any yellowing at the tips means its either too much water or not enough ...they dont like the cold so in winter make sure they are under the eves and getting good sun,, in the summer however make sure they arnt in direct sun they will burn...
its winter so dont be suprised if he sleeps and dosnt grow or die just watch for rot at base and wait it out till spring.

cut off the sick part, cut back, replant using more potting soil. Also, cut off a small healthy shoot, place in water, new roots should shoot out to start a new plant.
