I don't know much of the word's origin. But perhaps somehow just like wondering why you are called by your name. Do you ever question about it? Why do your parents call you that name? Same is the word sex. That thing was called "sex" because it was agreed somehow by the original English community. In our dialect it is called "iyot". Sounds fishy but that is it all about. Terms differ from place to place depending upon the nature of the language it is supposed to signify.
I call myself "King JaM3z" because that's the way I like and I feel more comfortable with it.

I have often wondered that myself. Sex means gender to me. I think that most American folks are still scared about the ramifications of the word. "Sex" can be spoken very quickly and therefore swept under the rug so to speak. We, they, I had sex---HAD sex??!!---you are sex. Sexual activity is the reason for your being, like it or not!(¦<)>

Because we are all either male or female sex (with a few exceptions) and the act generally involves one of each to reproduce - thus creating another sex.
How you do it, or with whatever sex it is, doesn't change the description.

As "outkast" said, it's from Middle English, originally derived from the Latin 'sexus' which is believed to be related to the Latin word 'secare', meaning 'to divide'.
