We love to eat this in the Winter months. There is way more tomatoes in it than macaroni-more on the soupy side.

I have normally had the white sauce with cheese type macaroni that is a little boring now...

Yes! The simple way my grandmother always made it, and what I always get the cravings for ! We drink 2% milk around the house, but always use WHOLE milk for mac & cheese. Huge difference. And I put the milk in a big measuring cup and while I'm fixing the macaroni, and grating the cheese, so the milk is not so cold when I add it to the dish. I don't make a cream sauce. I grate almost a stick of Kraft Sharp Chedder Cheese and layer it with the macaroni, with a little salt and pepper, and top it off with a sprinkle of cheese. Then bake it,, 350,,,,,,till the milk is absorbed, but not dry. It is different each time, since I don't measure the milk, so sometimes, I pour some milk off towards the end. As you can see, I keep it basic, but I get no complaints ! Enjoy!! ( Now I am sooo hungry for some LOL )

I love cooked tomatoes and will pair them with all sorts of things!...and macaroni is one! :-)

Try this simple recipe...

1 lb ground beef [or turkey/chicken]

2 Cans of Stewed Tomatoes [ or use fresh tomatoes, a bit of green pepper]

1 thinly sliced slivered yellow onion

4 medium potatoes

Pre boil diced potatoes...to 'al dente'

Brown the meat and drain off excess fat

Saute' the onions with the tomatoes and juice from tomatoes

Add potatoes, season to taste, cover and simmer 15 minutes.

Serve with biscuits...quick winter meal that everybody loves

I love macaroni and tomatoes, but I haven't had them in awhile. I have some tomatoes ripening that we had to pick when the weather turned cold. I made some chili, maybe I'll use the rest to make me some macaroni and tomatoes, thanks for the reminder. I like to add hamburger to the mix sometimes too.

I make Pasta Fagioli soup...regularly. It is a tomato based soup with lots of herbs, onions, carrots, celery and a coupla good handfulls of macaroni or ditalini. No meat other than chicken stock used for the broth. I use vegetable broth when making it for my adult kids because they are vegetarians...Right before serving, I add a can of drained canellini beans....delish.

Probably make a pot every other week. It's so easy and freezes well.....sooooo yummy when it's cold as the dickens and you need some comfort food....and I LOVE tomatoes.

Not a big fan of chunks of tomatoes. Now chop them up fine, add some Italian spices, maybe a touch of Olive oil and some onions and peppers, mix that with the macaroni and you have a deal!!

I make my own spaghetti sauce with tomatoes but not just cut up tomatoes, I do however love tomato soup with butter and salt and pepper on spaghetti in the winter, its very comforting.

My favorite cooking suggestion for almost anything -- throw in a can of Ro-Tel. They are cooked chopped tomatoes with minced jalapeno chiles. Start from there and then see what's in the fridge to add in.

I've never prepared it that way, but I like it cooked in tomato juice (I cook the noodles in water first, until al dente, then add to juice & cook till done)....ladle up a bowl full and sprinkle it liberally with Parmesan cheese. Serve with buttered hot rolls. Mmmmmm.........lol. Also good with shredded cheddar cheese. My husband likes to add ground beef, onions, green peppers & mushrooms. Yuck!

My Mom and Dad use tomatoes in their macaroni these days... we go over for dinner sometimes... it's not bad, but I prefer my macaroni and cheese without tomatoes.
