How on Earth do I find more ethers, and more importantly, megalixirs?? They're practically non-existent in this game!

You can buy Ethers from the hidden merchant in the Necrohol of Nabudis. He is located right here (marked with a red X, labeled Secret Shop):

The Hidden Merchant will not be visible, just go where it is marked on the map, and an action icon will come up. Press X and he will appear.

You can also make Ethers show up in the bazaar by selling 2 Unpurified Ether and 3 Caramel (comes up as Flask of Oily Liquid). Hi-Ethers can be made by selling 2 Unpurified Ether, 2 Foul Liquid, and 4 Slime Oil (comes up as Flask of Viscous Liquid).

Megalixirs are quite rare, but you will find a few of them in chests later in the game. You can make them show up in the bazaar if you sell 3 Onion, 3 Rat Tail, and 2 High Arcana (it will be listed as Esoteric Draught). You can make Elixirs if you sell 3 Ambrosia, 3 Demon Drink, and 1 High Arcana (it will be listed as Saint's Draught).

I think you can only obtain these from the bazaar once, they are not repeatable.

EDIT - If you are always running out of MP, I have a solution for you. You can unlock different augments on the License Board like Inquisitor (Gain MP after dealing damage), Marytr (gain MP after taking damage), Headsman (gain MP after defeating a foe), and Warmage (gain MP after dealing magick damage). Here is the License Board, and all augments are in green. Just click to zoom in on the section you need.

I marked your question with a star, because I think others will find this information I posted useful.

GirlsRGamers2 is spot on with everything she said, she deserves your best answer. I wanted to throw in another tip that if you get an accessory called the Diamond Armlet, a lot of random chests have a decent percentage chance of having an Elixir, Megalixir, Hi-Ether, tons of things infinitely better than a Knot of Rust. You can find one on the Tchita Uplands, dropped by Mom Bombs in the Giruvegan Great Crystal, or from the hunter's trophy shops at the Phon Coast.

Also, don't forget the Charge Technick! Set a gambit of something like Self, MP<10%: Charge. 20% works okay too but then you might find yourself out of MP because of Charge.
