Yep, I always bake cookies for Christmas. This year it will be chocolate chip, sugar, and gingerbread. I also make candy. So far I'm making turtles, chocolate covered cherries, divinity, peanut butter balls, coconut chews and rice crispy treats. Those are usually my Christmas presents to people who are hard to buy for.

Oh yeah, I almost forgot. I've got a carry-in dinner to go to. So I'm baking a pineapple upside down cake (no time to decorate).

Yes, I am baking for Christmas and no you aren't crazy. It sounds like you have got some thoughtful trays going for folks.

I'm making double double Ghirardelli chocolate brownies with walnuts, mini cheesecakes with raspberry culis, pecan pie squares, chocolate mousse cups, peanut butter chocolate cups, chocolate lava cakes, peach melba trifles, lemon bars, shortbreads dipped in dark chocolate and toasted almonds and strawberry margarita mousse--and whatever else my customers want. LOL

we have always had a big spread for christmas, spending two days baking and cooking. after 33 yrs we are taking a break and not doing any cooking at all. we are getting chickens from a take away shop, salads from the supermarket, and our daughter-in-law is doing the sweets. i can't wait.
