Nice soft pajama's and a matching robe.... look at what she likes to wear and find something simular.
Like my mom where long thin cotton pj"s which short sleeves.. so follow your mom's habits. Elderly do not like heavy clothes for their body is more sensitive so look for clothes that are not heavy. Elderly spend alot of time sleeping so she will think of you when she puts them on!

Write some iou notes to your mother saying on such & such a day / night you'll take her to lunch / dinner / a movie. Promise you'll spend so much time on certain days with just you & her so you'll have "girl" time. A day or what ever it takes for the two of you to go through old pictures to find out who is who. A day or whatever it takes to do a scrapbook starting when she was a girl , up through the years, etc. Wrap all the notes in a nice box . You may think she's not sentimental and she may say she isn't but I bet she is. Nothing like spending time with your mother to really get to know her.

Something to make life easier. My mom is 81 and liked things like a electric can opener that walks itself around the can. She can't open jars now so maybe a jar opener this year. She is having trouble walking so for her 80th birthday I got her a pretty cane and she uses it. A better adjustable desk chair for when arthritis makes her unable to get out of lower chairs. This year she invited people for Christmas Eve that will be a Monday night. I told her not to worry about the food I will make things to bring and come early to help, she has been buying candy but I will bring other food type things like deviled eggs, maybe ham, cheeses and bagels, chex party mix, punch, layered bean dip, little smokies, homemade fudge. The relief of not having to do all the shopping and assembling will be part of the gift.

Well Pat.moor hit the nail on the head. The only thing I would add is a nice hand written Christmas letter letting her know how much she means to you. Mention specific events in your lives that she can relate to and laugh/cry with. Maybe even some memorable photographs that mean something. I know you said she's not sentimental, but really, deep down, she is.

Donate to her favourite charity. Have a tree or a grove of trees planted in her honour somewhere. Buy her a heifer to give to some family who needs one.
Lots of charity donations. Most people with lots of money and no sentimentality probably appreciate something like this.

What age do you consider as elderly? Is she a gardener, what type of things does she like doing? Is she involved in the community at any level? These are areas you might consider when you are looking at what type of present to get her.

Why don't you make a charitable donation in her name? I did that last year for my mohter who sounds like your mother's long lost twin:)
I donated a sheep to a needy family through Heifer International (you can google them) My mom didn't need anything but I still honored her through the donation. Perfect!
