Todd Rundgren has done a few good Beatles covers - Strawberry Fields Forever, Rain, While My Guitar Gently Weeps, You've Got To Hide Your Love Away and a few others. In fact, Utopia recorded an album called Deface The Music made up of songs that were all inspired from Beatles songs with the band dressed up looking like the Beatles. Remeber that Todd has worked with Badfinger and even produced a couple of albums that had past Beatles playing on them.
The Grateful Dead have pulled out some good Beatles covers over the years.

I agree with Dan C, I love Siouxsie & The Banshees' take on "Helter Skelter". They give it a punk/goth twist which is always great [for me].
And i know this isn't a cover /song/, but i really love Peter Sellers reciting the lyrics to "A Hard Days Night", it's hilarious.
