I take it that it is an older oven, I would bet that through the years the insulation has gotten wet through steam generated by cooking and the food odors are emulsified into the insulation. Time for a new oven, one clue would be if you have hot spots and uneven cooking!!

You didn't say if the oven is stand alone or a wall oven. Doesn't really matter, you have to clean out from under, above and the sides to remove all sorts of "stuff". In a wall oven it's easy but a stand alone it will be a little harder. You're probably right about the mice, they've probably gotten into the insulation and nested. Oh yeah, and peed all over everything. Don't forget to block any way they could return and build another nest. If you can afford it, it may be to your advantage to opt for a new appliance.

Easy off oven cleaner... make sure you're well ventilated while you clean the oven...it has bad fumes... The smell of the oven cleaner should drive the mice out too, but I would bait some snap traps anyway, but that's just me.

Last time mine smelled like that I had a mice nest in it, like between the oven & stove wall. I had to buy a new one. I only smelled it when I used the oven. Good luck!

You might have to turn the oven on to its highest temperature (500F) or the "clean" setting (hotter than 500F) and burn off the dried urine. It might take a 1/2 hour to burn it all off, but that might be the only way.
Get a fan, open the windows, and move into the other room for the duration (but don't leave the house with a super-hot oven running).

I can't answer you on the issue of suspected rodents, however, try putting 1 cup of baking soda in a glass baking pan and fill with hot water. Place overnight in cold oven. Repeat the next day. Try it - at least it doesn't cost very much and it just might do the trick - a natural alternative to costly chemicals.

It could have been both. Mice will get anywhere. Does your oven self clean that might get the smell out. It may stink in the process of cleaning.
