Pasta comes in many shapes....everybody has their favorites. Some are better for different purposes...what type of sauce, what type of meat and vegetables, etc.
It all started with Marco Millioni. They called Marco Polo Marco Millioni because he came back from China....with Chinese pasta called low mein that Italians were influenced by to make their own pasta.....and he told of a faraway land of yellow skinned people by the millions. By the millions? The Italians thought it was absurd that some faraway land, that they had never seen, could have millions of people.
Even then, China was heavily populated.
The difference between Chinese pasta and Italian pasta is remarkable. The Italians had their own take on what pasta should be.

There may be umpteen shapes and sizes ... but it's still pasta!
In case you think otherwise, I am a lover of nearly all things Italian, but pasta IS pasta. If you're talking of pasta sauces and accompaniments, however, that is different .....

I have always been a pasta lover....I think I have always taken the different types for granted, though....but you are right. It is wonderful how many different types there are.
